Jambalaya Salad recipe

Combine the smoky, hearty flavors of traditional Cajun jambalaya with the freshness of a delicious salad for the perfect side dish bursting with Creole flavor. Serve at your next family picnic for a salad that will wow your guests!

Ingredients:

  • 1 1/3 c. water
  • 2/3 c. uncooked long grain rice
  • 6 slices bacon
  • 6 oz frozen cooked shrimp
  • ½ c. ham, cubed
  • 1 green bell pepper, chopped
  • ½ c. sliced celery
  • ¼ c. chopped onion
  • 1 c. chopped fresh tomato
  • ¾ c. Italian salad dressing
  • ¼ tsp chili powder
  • 1 clove garlic, minced
  • ¼ tsp salt

Directions:

  1. In a medium saucepan, bring water to a rolling boil. Stir in rice, reduce heat to low, and simmer 20 minutes or until cooked through. Remove from heat and cool.

  2. In large skillet, fry bacon over high heat. Cook until browned and crispy. Drain, cool and crumble.

  3. In large bowl combine rice, bacon, shrimp, ham, bell peppers, celery, onion, and tomatoes.

  4. In small bowl combine dressing, chili powder, garlic, and salt. Pour over rice mixture and toss to coat. Cover and chill in refrigerator 4 hours or until ready to serve.
